Does anyone know which films Disney will release onto 2-disc SE in 2005, 2006, 2007, and 2008?

Whichever haven't been already!
Look for Disney to "maximise their profits" on standard DVD before converting to Blu-Ray and starting all over again.

Yes but two years ago there was a list of all Disney 2-discs from then thru 2008.

You're talking Platinum Editions.
The list hasn't changed - just truncated down to two a year instead of one every October.

Bambi (already released)
Pocahontas (already released)
Lilo and Stitch (already released in certain countries, rumoured this year for Region 1 US/Canada and Region 2 UK release)
Cinderella
Toy Story
2006:
Lady and the Tramp
The Little Mermaid
Song of the South (just a rumour: Jim Hill says that this may reach the light of day next year)
2007:
101 Dalmatians
The Jungle Book
2008:
Pinocchio
Snow White and the Seven Dwarfs
There's also rumours that films such as
Dumbo and
The Hunchback of Notre Dame may get a 2 Disc Special Edition. I hope so!

We're still missing - on DVD - The Adventures Of Andre And Wally B, Red's Dream, and the pre-tinkered with Knick-Knack.
Those with the original Toy Story LaserDisc set will have all the Pixar shorts up until the original Knick-Knack. The rest of them have been released on DVD with the films they screened with.

Well, exactly that - the flat-chested summer ornament and the mermaid in the fish bowl as opposed to the Pamela Anderson-buxom babes that they were in the original.
And, no. Let's not let this go off into a flat/ample bosom debate!

I think my fave is Gerry's Game, by far. It was very complex and yet done so simply--pure genius.
I like Tin Toy but the baby's design really puts me off. Creepy!

It's fun comparing Jack-Jack Attack to Tin Toy...CGI certainly has come a long way!
