Maybe because there was an apple in the old cover and they want something new.
Thought I wonder why they always use the apple as Snow White's symbol,like how every Princess has her symbol and she always has a poisoned apple as her symbol,not only that the apple almost killed her they always show it like it's a magical thing and it's something evil that the Evil Queen made to kill her.
