Since we have Catherine O'Hara back for no reason except...Warner, I'm assuming the Pretentious Artists return.
With Dafoe standing in for the late Glen Shadix, seeing as Dafoe already aced the pretentious-artist role in "Mr. Bean's Holiday".

You can assume that. But we’re gonna go the "villain" route, with him being a bio-exorcist watchdog who makes Beetlejuice's afterlife hell.

I heard that Alec Baldwin isn't going to return after his manslaughter incident on the set of Rust. Who will replace him, or will his character be written out of the story altogether?

The Rust incident happened long before Beetlejuice Beetlejuice started filming, and Baldwin's character was never set for a return. Geena Davis is likewise not returning because, as she said, "ghosts never age", which is also a lot to do with the plot and how Beetlejuice comes back in the modern era. Personally, while it will be cool to see some people returning, I think it would have been good to just have Keaton show upon a new environment and circumstances, as he would have done time and time again long before he was even summoned by the Maitlands, hence his reputation.
